61 NORTH Barrel #32 is the second release in our single barrel series. Another expression of the spirit with atypical whisky characteristics. 

Once again our pure malt new make spirit, double distilled on site, spent a short amount of time in small re-coopered French oak 20L barrels, previously used to mellow either Apera or Tawny. Following this initial rapid aging period, the deep, vibrant spirit full of sweet dried fruit flavour and oak richness was transferred to a very special single French oak ex-apricot brandy to mature and mellow. The result: a un-filtered truly original whisky, with stone fruits on the nose, heightened rich toasted jam like notes on the palate and a long pleasant oily, vanilla and chocolate finish.

Serve on ice for a gentle sipping experience. Most delicious in an Apricot Whisky Sour or try it in your favourite cocktail.


Tasting Notes

Nose: 

Soft stone fruits with warm vanilla and subtle spice notes.

Palate:

Reminiscent of sweet buttery, jammy toast of the malt character, balanced against warm spiced chocolate and vanilla notes.

Finish:

Long sweet, oily yet refreshing finish of toasted malt, chocolate and vanilla

 

Serving

Apricot Whisky sour

30ml  61 North Whisky – Barrel #32

2 tsp  Apricot jam 

30ml  Lemon juice 

2 drops Insta-foam or half an egg white 

Double shake and double strain over ice into a rocks glass.

Garnish with a few sage leaves. 

Whisky Mule 61

30ml Lime juice

Fresh mint leaves

Ginger beer 

Plenty of ice

Candied ginger and lime wedge garnish 

 Muddle lime, whisky and mint together in a tall glass.

Add ice, pour over ginger beer and garnish with candied ginger and fresh wedge of lime.
